This might be one of the fastest pasta dishes I have every prepared, everything can be done in less time than it takes the water to boil and the pasta to cook. Fresh fettucini only takes about 1 minute, if you can't find fresh then use regular and start the sauce and the nuts when you put the pasta in the water.
1 box fettucini (ideally fresh egg fettucini)
dozen fresh sage leaves - chopped
4 tbsp butter
1/4 cup pine nuts
coarsely grated cheese - either parmesan or pecorino
1. Start pasta water boiling, once it just starts to bubble begin the sauce.
2. In a large pan melt the butter. Add the sage and cook on medium heat, making sure the sage does not burn, if it starts to burn, turn the heat down to low.
3. In small pan brown the pine nuts over medium heat.
4. Cook pasta, add to pan with butter and sage, add pine nuts to pan, toss well. Serve immediately with grated cheese.
